I love chicken, I love BBQ sauce, I love Blue cheese. That is why I created this awesome pizza inspired by your basic BBQ pizza. It’s so easy, and the only thing you’ll be cooking is when you actually put the pizza in the oven (the chicken is pre-cooked, the dough is pre-made, you could even buy your veggies pre-sliced, but seriously, don’t be so damn lazy).

BBQ Chicken Pizza with Rogue Valley Blue Cheese”

Ingredients (this makes TWO 13″ pizzas with thin, crispy crust):

  • 1 plain pizza dough from Trader Joe’s (don’t get the whole wheat or herbed, they suck)
  • 3/4 cup Jack Daniel’s Original No. 7 BBQ sauce
  • 20 cloves of roasted garlic
  • 1 cup Lite Shredded Three Cheese Blend from Trader Joe’s
  • 1/4 cup good quality blue cheese
  •  8 oz. “Just Chicken” refrigerated grilled chicken breast slices from Trader Joe’s
  • 1/4 large red onion, chopped in ribbons
  • 1 cup chopped fresh pineapple (don’t use canned if you can avoid it)

Instructions:

First, remove the pizza dough from the bag and let it rest on the counter for 40 minutes while you prepare your mise en place (google it).

 
  1. Chop up your chicken to the desired size and mix in a bowl with 1/4 cup of the BBQ sauce (reserve the other half for the bases of the pizzas). Mix well. Set aside.
  2. Chop your onions and pineapple, etc.
  3. Using a cast iron skillet if you have one (you can also use a pizza stone per it’s instructions, an unglazed large tile from Home Depot-which works just as well, or a plain old baking pan), spray it with something so it won’t stick to your pizza. I’m doing a once-over of vegetable spray.
  4. Get your oven screaming hot! The highest it goes. Open some doors and windows and power down the fire alarm. I tend to get the house smoky when my oven gets that hot. Remember pizza ovens cook at 800 degrees plus, but mine only goes to 500.
  5. Now assemble your dough. Stretch it to the far reaching corners of your pan.
  6. Assemble your pizza. Leave about 1/2 inch with no sauce on the edges. Cover the dough with the BBQ sauce, spread around the cheeses (leave some to sprinkle on top), put your chicken mix down followed by the veggies. Finish it with cheese on top.

Bake until it looks delicious, or about 10 minutes. Enjoy!
