I recently went to this Mexican Food place near my work and ordered some shredded beef taquitos. They were so delicious. They came with Mexican rice and refried beans, 3 taquitos and it was all topped with sour cream, cheese, guacamole, pico de gallo and shredded lettuce. After staring at my to-go container full of food, I immediately felt like a fat-ass and split it up into 2 meals. I figured, I love taquitos, but those fried suckers are literally HORRIBLE for you. Normally a beef taquito is 8 points, so I wanted to make a healthier alternative. I wanted to be able to eat 2 whole taquitos with pinto beans, and top my taquitos with fat free sour cream and pico de dallo, all for under 10 points. Using this taquito recipe, you can do it. I’ll show you how and it’s so easy you will literally shed a tear.

….Just one tear, though. Seriously, pull it together.

Healthy Baked Chicken & Cheese Taquitos

Ingredients (16 taquitos):

  • La Tortilla Factory Corn Tortillas (2 packages of 8)
  • 12 ounces OR 1 1/2 cups of shredded chicken
  • 3 stalks of fresh green onions and/or scallions
  • 1/4 cup of chopped cilantro
  • 3/4 cup of Reduced Fat Mexican 4 Cheese Blend
  • Seasonings of your choice (salt, cumin, Sazon Goya)
  • Vegetable oil spray
  • Toothpicks, wooden


1.  Chop up all your ingredients and put them in a medium bowl. That’s right. There is NO need to pre-cook anything.

2. Combine well. Add your seasonings.

3. Open your tortilla packages and put them in the microwave for 1 minute. Then, lay your warm tortillas on a cutting board and fill each one with a couple of tablespoons of filling. Hold them together with toothpicks and place them SEAM DOWN on a GREASED baking sheet. Then, spray all of the taquitos with vegetable spray.

4. Place in a 350 degree oven for about 20 minutes. Then, take them out to flip them over. Stick in any needed toothpicks to keep them together. Bake for 5-10 more minutes after flipping.

    • 2 chicken taquitos (6 WW)
    • 1/2 cup refried beans, canned (2 WW)
    • 1/4 cup of fat free sour cream (1 WW)
    • 1/2 cup of Home-made pico de gallo (0 WW)
    • 1/8 cup chopped cilantro (0 WW)
